We have extended both left and right flighting to intersect a center line on the older heads with 4" flighting. We did this to prevent the wheat and barley straw from standing in front of finger at high speeds. We welded some keystock on pressure side of flighting to aid in pulling straw down under tube if just the flight didn't fix problem completely. The straw would stand there in some conditions and soon enough you were leaving strip in the field. We had to do this in order to use the capacity build into machine and we did not remove fingers when we did this. I have never found a condition with 700 or 800 (which all have 7" flighting) where flighting needed to be changed in any way. I would leave provision for fingers even if you are thinking of running 7" flighting all the way for then you could play around with leaving some out if you think it will reduce your problems.
