In this area - central Ontario - colour of the beans, weed staining and % dockage are being used to qualify for food grade. Immature beans which are too grey in colour will be disqualified; so will too much discolouration from harvesting weedy crops. These are rather subjective. The dockage allowance is 1 or 2 % maximum I believe.
