Hardened concave won't make any difference in regards to damage to any grain. Steel is always hard in whatever condition, hardened or not. You are right, you change concaves less often, and hardened will keep its edge longer to do a better thresh longer. If you are looking for a hardened or hard chromed concave, loewen manufactures them.

You can damage grain if you throw it against a wooden board hard enough. Rotor speed and concave settings are what causes grain damage. If a concave is worn, you're required to pull it up tighter to maintain thresh. Tighter settings require faster rotor speeds in order to feed the machine, causing threshing elements to wear even more quickly, also forcing more trash to the shoe which returns more grain to have the chance of cracking.
