The condition of the wheat seems to make a pretty big difference. When it is perfect (standing well, ripe, dry, reasonable amount of straw, etc.) a well-setup 80 series machine should be able to run 6 mph with a 25 ft header in 50 bu wheat. That calculates out to about 18 acres per hour, which you would need to reduce to compensate for roading, dumping, etc. If you can tell us what machines you are running now, what header size, and how fast you can typically run, it might be easier to give you a relative answer. Things like wet ground or lodged crop can really slow you down if you have to contend with them.
