The open concave is the open grate at the bottom of the cylinder. The earlier combines had small channel irons bolted to the bottom of the cylinder area against solid steel plate as did the K and F series. The l and M had the open grate to let the grain start dropping thru immediately to the raddle(conveyor) thus giving more capacity and area to start the separation process. The stalks_vines stayed in the cylinder chamber and were laid on top of the grain and finer particles as the were sent back to the fan, walkers, chaffer and sieve area(shoe). Kind of a pre-separation process and an enlarged concave area to work with for better threshing. I have owned both open and closed and the open is so much better.
