I tend to shy away from the one and done crops, like carrots and radishes. Both are easy to grow, but it doesn't feel like the harvest has much payoff.

What is a one and done crop? I don't think I've heard that one before. Personally, I'm not going to chase something that won't grow in my area, but I'm willing to cultivate anything that grows here so long as it sells.

I will grow anything so long as it's economical.

From the examples of a radish and a carrot I think the OP means one seed = one thing to eat. I don't think you can eat radish or carrot tops, but maybe you can. And you can't harvest them more than once like you can with a tomato plant or fruit tree.

Mint is the only plant that I'll grow that spreads as much as it does and as easily as it does. All others are off limits. I also won't grow Walnut trees because they slow the growth of other plant life.
