Trees and beets are two of the biggest cash crops in the Pacific North West. What else thrives out here that meets a need in the market?

Are you in Oregon? If so, I would think pot and hemp were two big commercial crops that you could start with. Maybe the market is too tight already for that though.

Hops, wheat, and dry beans are popular commercial crops in that area. So are apples, grapes, and other cane berries. If it were me, I'd probably plant artichokes since they are a perennial crop that won't grow in plenty of other regions.

Artichokes would be a great idea @MartyR.
I think berries are a smart choice too. People go crazy here for berries during berry season (all berries). Good luck with whatever new item you choose.
