We sell both ways here, by the animal or we get it butchered and sell the meat too. With Easter right around the corner we have been super busy with selling fresh hams. I notice the same around Christmas with ham or prime rib.
My brother is a cattle farmer and they mostly sell the animals. They don't butcher their own animals. They also don't really want to deal with the public so they don't sell by the pound. I don't think many do around here.
