Other than cannabis, my most consistently profitable crop (most money for least work) has been garlic. I plant in late fall/early winter, after other production is done. i plant through plastic film mulch, and cover with mulch hay and row cover after a good freeze.
Harvest and cure mid-July, sells well at my local markets, and stores all year. I keep enough bulbs back to re-plant.
I have a friend with beehives, and he makes his own very tasty honey-garlic sauce for sale. Never tried to do that myself, but lots of possibilities for value-add with garlic.
